🥒 Zucchini, Feta, and Spinach Fritters with Garlic Tzatziki 🧀
📋 Ingredients:
For the Fritters:
2 medium zucchinis, grated
1 cup (100g) baby spinach, finely chopped
1/2 cup (60g) crumbled feta cheese
2 cloves garlic, minced
1/4 cup (30g) grated Parmesan cheese
1/4 cup (30g) all-purpose flour
2 large eggs, beaten
1 tablespoon fresh dill, chopped
Salt and pepper to taste
Olive oil for frying
For the Garlic Tzatziki:
1 cup (240ml) Greek yogurt
1/2 cucumber, grated and squeezed to remove excess moisture
2 cloves garlic, minced
1 tablespoon lemon juice
1 tablespoon fresh dill, chopped
Salt and pepper to taste


📝 Instructions:
1️⃣ Prepare the Garlic Tzatziki by combining all the ingredients in a bowl. Mix well and refrigerate until ready to serve.
2️⃣ In a large mixing bowl, combine the grated zucchinis, chopped spinach, crumbled feta cheese, minced garlic, grated Parmesan cheese, all-purpose flour, beaten eggs, chopped dill, salt, and pepper. Mix until well combined.
3️⃣ Heat olive oil in a skillet over medium heat.
4️⃣ Scoop spoonfuls of the fritter mixture into the hot skillet, flattening them slightly with the back of the spoon.
5️⃣ Cook the fritters for 3-4 minutes on each side, or until golden brown and cooked through. Transfer to a plate lined with paper towels to drain any excess oil.
6️⃣ Serve the Zucchini, Feta, and Spinach Fritters warm with the prepared Garlic Tzatziki on the side for dipping.
