Cheesy Garlic Zucchini Steaks
Savory Cheesy Garlic Zucchini Steaks
2 medium zucchini
Kosher salt
4 cloves garlic, finely chopped or grated
1/4 tsp. crushed red pepper flakes, plus more for serving
4 Tbsp. extra-virgin olive oil, divided
2 oz. mozzarella, shredded (about 1/2 cup)
1 oz. Parmesan, finely shredded (about 1/2 cup)
2 Tbsp. fresh basil, torn

Slice each zucchini in half lengthwise and score flesh in a crosshatch pattern. Season with 1 teaspoon salt and let sit for 15 minutes.
Preheat oven to 425°F. Cook garlic and red pepper flakes in 2 tablespoons olive oil over medium heat until fragrant. Set aside.
Heat 1 tablespoon olive oil in skillet over medium-high heat. Pat zucchini dry and cook flesh side down until golden, 2-3 minutes. Transfer to a baking sheet flesh side up.
Brush with garlic oil and bake until tender, 8-10 minutes. Top with mozzarella and Parmesan.
Broil on high until cheese is melted and browned, 2-3 minutes. Top with basil and more red pepper flakes.
