Decadent Peanut Butter Stuffed Double Chocolate Cookies

Ingredients:

1 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar, packed
2 large eggs
1 tsp vanilla extract
2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup semisweet chocolate chips
1/2 cup creamy peanut butter, chilled


Directions:

Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
Gradually add the dry ingredients to the creamed mixture and mix until well combined.
Fold in the semisweet chocolate chips until evenly distributed.
Scoop about 1 tablespoon of cookie dough and flatten it in your palm. Place a small amount (about 1 teaspoon) of chilled peanut butter in the center and fold the cookie dough around it, shaping it into a ball. Repeat for the remaining dough and peanut butter.
Place the stuffed cookie dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until the edges are set and the tops are slightly cracked.
Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
