📋 Ingredients:
4 medium zucchinis
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 cup (150g) cherry tomatoes, halved
1/2 cup (75g) crumbled feta cheese
1/4 cup (30g) Kalamata olives, chopped
2 tablespoons fresh parsley, chopped
1 tablespoon fresh lemon juice
Salt and pepper to taste
Red pepper flakes (optional)
Grated Parmesan cheese for topping (optional)
📝 Instructions:
1️⃣ Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper.
2️⃣ Slice the zucchinis in half lengthwise and scoop out the seeds and flesh, leaving about 1/4 inch shell.
3️⃣ Heat olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
4️⃣ Add the cherry tomatoes to the skillet and cook for 2-3 minutes, until slightly softened.

6️⃣ Spoon the filling mixture into the hollowed-out zucchini halves, distributing it evenly.
7️⃣ Place the stuffed zucchini boats in the prepared baking dish. If desired, sprinkle grated Parmesan cheese on top.
8️⃣ Bake in the preheated oven for 20-25 minutes, or until the zucchinis are tender and the filling is heated through.
9️⃣ Serve the Mediterranean zucchini boats hot, garnished with additional chopped parsley if desired.
