Delicious Strawberry Cream Cheese Chimichanga

Ingredients:

8 oz cream cheese, softened
1/4 cup powdered sugar
1 tsp vanilla extract
1 cup diced strawberries
4 large flour tortillas
1/4 cup unsalted butter, melted
1/4 cup granulated sugar
1 tsp ground cinnamon
Vanilla ice cream (optional, for serving)


Directions:

In a mixing bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, mixing until well combined.
Spread a quarter of the cream cheese mixture onto each flour tortilla, leaving a border around the edges.
Sprinkle diced strawberries evenly over the cream cheese mixture on each tortilla.
Fold in the sides of each tortilla, then roll up tightly, like a burrito.
In a shallow dish, mix together the granulated sugar and ground cinnamon.
Brush each chimichanga with melted butter, then roll in the cinnamon sugar mixture until coated evenly.
Place the chimichangas seam-side down on a baking sheet lined with parchment paper.
Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until golden and crispy.
Remove from oven and let cool slightly before serving.
Serve warm, optionally with a scoop of vanilla ice cream on the side.
