Ingredients:

1 kg of fresh blackcurrant
700 g caster sugar
The juice of a large lemon


Instructions:

Lightly crush the blackcurrants and place them in a large saucepan.
Add the sugar and lemon juice to the fruit and mix well.
Heat over medium heat, stirring frequently, until the sugar is completely dissolved.
Bring to the boil, then reduce the heat and simmer for about 40 minutes, or until the jam thickens.
Pour the hot jam into sterilized jars, seal tightly and let cool to room temperature.
