Decadent Churro Cheesecake Donut Cookies

Ingredients:

2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1/2 cup cream cheese, softened
1/4 cup granulated sugar (for coating)
1 teaspoon ground cinnamon (for coating)
1/4 cup melted butter (for coating)


Directions:

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy and smooth. Add the egg and vanilla extract, and mix until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
In a small bowl, combine the cream cheese and 2 tablespoons of the sugar mixture until smooth.
Scoop about 1 tablespoon of cookie dough and flatten it slightly. Place a small amount of the cream cheese mixture in the center, then top with another tablespoon of cookie dough, sealing the edges to form a ball. Repeat with the remaining dough and filling.
Place the cookies on the prepared baking sheet, spacing them about 2 inches apart.
Bake for 12-15 minutes, or until the edges are lightly golden.
While the cookies are baking, mix the remaining 1/4 cup granulated sugar and ground cinnamon in a small bowl.
When the cookies are done, brush them with melted butter and roll them in the cinnamon sugar mixture. Let cool on a wire rack.
