Traditional Aloo Gosht: Mutton and Potato Stew
Ingredients:
500g mutton, cut into pieces
3 medium potatoes, peeled and quartered
2 tablespoons oil
1 large onion, finely chopped
2 tomatoes, pureed
1 teaspoon ginger paste
1 teaspoon garlic paste
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
Salt to taste
2 cups water
Fresh cilantro, chopped for garnish


Directions:
Heat oil in a large pot over medium heat. Add cumin seeds and let them sizzle for a few seconds.
Add the onions and sauté until they turn golden brown.
Stir in the ginger and garlic pastes and cook for another minute.
Add the mutton pieces and brown them on all sides.
Mix in the coriander powder, turmeric, red chili powder, and salt. Cook for 2 minutes.
Pour in the pureed tomatoes and cook until oil begins to separate from the gravy.
Add the potatoes and water, bring to a boil, then reduce heat to low. Cover and simmer until the mutton is tender and the potatoes are cooked, about 40-50 minutes.
Garnish with chopped cilantro before serving.
