Spicy Jalapeno Cornbread with Sweet Lime Honey Glaze
Ingredients:
For the Cornbread:
1 cup cornmeal
1 cup all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup buttermilk
2 large eggs
1/4 cup unsalted butter, melted
1/2 cup sour cream
1 cup corn kernels (fresh or canned)
2-3 jalapenos, seeded and finely chopped
For the Lime Honey Glaze:
1/4 cup honey
2 tablespoons lime juice
1 teaspoon lime zest
Directions:
Preheat your oven to 400°F (200°C). Grease an 8-inch square baking pan or line it with parchment paper.
In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
In a separate bowl, combine the buttermilk, eggs, melted butter, and sour cream. Mix until well combined.
Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the corn kernels and chopped jalapenos.
Pour the batter into the prepared baking pan and spread it evenly.
Bake in the preheated oven for 20-25 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
While the cornbread is baking, prepare the lime honey glaze. In a small bowl, whisk together the honey, lime juice, and lime zest until smooth.
