Spicy Beef Noodle Soup
Warm up with a bowl of this Spicy Beef Noodle Soup – it’s packed with flavor and perfect for chilly days! 🌶️🍜
Ingredients:
1 lb beef chuck, cut into bite-sized pieces
8 cups water
2 tomatoes, chopped
1 large onion, chopped
5 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon Chinese cooking wine
1 tablespoon chili bean paste (Doubanjiang)
1 tablespoon Sichuan peppercorns
1 star anise
1 cinnamon stick
2 bay leaves
1 tablespoon oil
Salt and pepper to taste
4 cups beef broth
2 packs fresh or dried wheat noodles
4 baby bok choy, halved
Fresh cilantro, chopped (for garnish)
Green onions, sliced (for garnish)


Directions:
In a large pot, heat oil over medium heat. Add beef and brown on all sides. Remove and set aside.
In the same pot, add onions, garlic, and tomatoes. Sauté until onions are translucent.
Add chili bean paste, Sichuan peppercorns, star anise, and cinnamon stick. Cook for 2 minutes until fragrant.
Pour in water, soy sauce, Chinese cooking wine, and return the beef to the pot. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, until beef is tender.
Strain the broth to remove solids. Return broth to the pot, add beef broth, and bring to a simmer.
In a separate pot, cook noodles according to package instructions. Drain and divide into serving bowls.
Add baby bok choy to the simmering broth and cook for 2-3 minutes until tender.
Ladle the hot broth and beef over the noodles in the bowls. Top with fresh cilantro and green onions.
