Savory Grilled Chopped Salad Deli Sandwich on Spicy Colby Cheese Bread

Ingredients:

8 slices Colby cheese bread
2 tablespoons unsalted butter, softened
2 cloves garlic, minced
1/2 cup chopped lettuce
1/2 cup chopped tomatoes
1/4 cup chopped cucumber
1/4 cup sliced red onion
1/4 cup chopped deli turkey or ham
1/4 cup crumbled feta cheese
1 tablespoon olive oil
1 tablespoon balsamic vinegar
Salt and pepper to taste
3 slices pepper jack cheese (🌶️ spicy cheese)
1/2 avocado, sliced


Directions:

In a small bowl, mix the softened butter with minced garlic until well combined.
Spread the garlic butter on one side of each slice of Colby cheese bread.
In a medium bowl, combine the chopped lettuce, tomatoes, cucumber, red onion, deli turkey or ham, and crumbled feta cheese. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper to taste. Toss to combine.
Heat a large skillet or griddle over medium heat. Place 4 slices of bread, buttered side down, in the skillet.
Layer the pepper jack cheese on the bread slices in the skillet. Top with the chopped salad mixture and avocado slices.
Place the remaining 4 slices of bread on top, buttered side up.
Grill the sandwiches for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted.
Remove from the skillet, slice in half, and serve immediately.
