Ingredients:
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1/4 teaspoon ground turmeric
4 cups sweet potatoes, peeled and cubed
1 can (15 oz) chickpeas, drained and rinsed
4 cups vegetable broth
1 cup coconut milk
Salt and pepper to taste
Fresh cilantro, chopped
Paprika for garnish
Instructions:
Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 5 minutes. Add the minced garlic, ground cumin, ground coriander, ground cinnamon, and ground turmeric. Cook for another minute until fragrant.
Add Sweet Potatoes & Chickpeas: Add the cubed sweet potatoes and chickpeas to the pot. Stir to combine with the spices and onions.
