Marry Me Salmon
Ingredients:
Salmon Fillets:
3-4 fillets, skin removed
Seasonings:
1 tsp dried basil
1 tsp garlic powder
1 tsp onion powder
1/2 tsp dried thyme
3/4 tsp red pepper flakes
1/4 tsp salt
1/4 tsp black pepper
For Cooking:
2 tbsp olive oil
1 cup chicken stock, unsalted
1/2 cup heavy cream
1/3 cup chopped sun-dried tomatoes
5 garlic cloves, minced
1/2 cup freshly shredded Parmesan cheese
Fresh basil
Instructions:
Combine basil, garlic powder, onion powder, thyme, red pepper flakes, salt, and pepper in a small bowl.
Season salmon with half of the spice mix on both sides.
Heat olive oil in a large skillet over medium-high heat. Sear salmon, flesh side down first, for 5 minutes on each side. Remove and set aside.
Sauté garlic and sun-dried tomatoes in the same skillet over low heat for 1-2 minutes.
Add chicken stock to deglaze the pan, scraping up any brown bits.
Add heavy cream, Parmesan cheese, and remaining spice mix. Combine thoroughly.
Simmer on medium-low heat for 10-15 minutes until the sauce thickens. Adjust seasoning if needed.
Return salmon to the skillet, spoon sauce over the fillets, and cook for 3-5 more minutes.
Garnish with fresh basil and serve.
