Lemonade Cake

Zesty Lemonade Delight Cake

Ingredients:

1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1/4 cup lemon juice (freshly squeezed)
1/4 cup lemonade concentrate
1/2 cup buttermilk
1 tbsp lemon zest
1 tsp vanilla extract
For the glaze:

1 cup powdered sugar
2 tbsp lemon juice
1 tbsp lemonade concentrate


Directions:

Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, beat the butter and sugar together until light and fluffy. Add the eggs, one at a time, beating well after each addition.
Mix in the lemon juice, lemonade concentrate, buttermilk, lemon zest, and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Pour the batter into the prepared cake pan and smooth the top.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
To make the glaze, whisk together the powdered sugar, lemon juice, and lemonade concentrate until smooth. Drizzle over the cooled cake.
