🍋🍪 Lemon Rosemary Butter Cookies 🍪🌿
Bright, buttery cookies infused with fresh rosemary and lemon for a perfect spring treat.

Ingredients:

Unsalted butter: 1 cup (2 sticks, 16 tablespoons)
Brown sugar: 1 cup
Egg yolks: 2 (lightly beaten)
Lemon zest: 1 lemon
Fresh lemon juice: 2 tablespoons
Salt: 1/2 teaspoon
Fresh rosemary (chopped): 1 tablespoon
All-purpose flour: 2 cups (plus more for rolling)
Coarse sparkling sugar: 1/2 cup


Directions:

Preparation

Cream Butter and Sugar: In the bowl of an electric mixer, cream together 1 cup unsalted butter and 1 cup brown sugar until smooth and fluffy.
Add Eggs and Lemon: Add 2 lightly beaten egg yolks, zest of 1 lemon, and 2 tablespoons fresh lemon juice. Beat until smooth.
Combine Dry Ingredients: Sprinkle 1/2 teaspoon salt, 1 tablespoon chopped fresh rosemary, and 2 cups all-purpose flour on top. Beat on low speed until the dough comes together.
Chilling

Form Dough: Pat the dough into a ball and place it on a piece of plastic wrap. Wrap it up and pat it down into a rough rectangle about 1/2 inch thick.
Refrigerate: Refrigerate for at least 2 hours or up to 48 hours.
Baking

Preheat Oven: Preheat the oven to 350°F (175°C). Line 2 baking sheets with parchment paper.
Prepare for Rolling: Lightly flour your countertop, then place the dough on top. Flour a rolling pin, then roll the dough out to about 1/4 inch thick.
Cut and Coat: Using a cookie cutter or small glass, cut circles of dough. Roll the edges of the dough in coarse sparkling sugar and place on the parchment-lined baking sheets, spacing at least 1 inch apart.
Bake: Bake for 8-10 minutes or until the edges are very light golden brown and centers look set.
