Delightfully fragrant lemon bars with a hint of lavender for a unique twist.

Ingredients:

Lavender Crust:

1 cup all-purpose flour
½ cup unsalted butter, softened
¼ cup powdered sugar
1 tablespoon dried lavender blooms
Lemon Curd Layer:

1 cup granulated sugar
3 tablespoons all-purpose flour
½ teaspoon baking powder
Pinch of salt
3 large eggs
Zest and juice of 2 lemons
½ teaspoon lavender extract
Lavender food coloring (optional)
Dusting:

Powdered sugar for dusting


Directions:

Preheat Oven:

Preheat your oven to 350°F (175°C).
Grease a 9×9-inch baking pan and line it with parchment paper.
Prepare Lavender Crust:

In a mixing bowl, combine flour, softened butter, powdered sugar, and dried lavender blooms until a crumbly dough forms.
Press the dough evenly into the prepared baking pan.
Bake for 15-20 minutes until the crust is golden. Remove from oven and let cool.
Prepare Lemon Curd Layer:

In a large bowl, whisk together granulated sugar, flour, baking powder, and salt.
Add eggs, lemon zest, lemon juice, and lavender extract. Mix until smooth.
If using, add a few drops of lavender food coloring and mix well.
Pour the lemon curd mixture over the cooled crust.
Bake:

Return the pan to the oven and bake for another 20-25 minutes until the curd is set and slightly golden at the edges.
Allow the bars to cool completely in the pan.
Finish and Serve:

Once cooled, dust the top with powdered sugar.
Cut into squares and serve.
