Ingredients:
– 3 liters of milk
– Salt
– 2 tablespoons vinegar
Instructions:
1. In a large pot, heat the milk over medium heat until it reaches a gentle boil, stirring occasionally to prevent scorching.
2. Once the milk starts boiling, reduce the heat to low and add the vinegar. Stir gently to combine.
3. Continue to cook the milk mixture over low heat for about 5-7 minutes, allowing it to curdle. You should start to see the milk solids separating from the whey.
4. Line a colander or sieve with cheesecloth and place it over a large bowl or pot to catch the whey.
5. Carefully pour the curdled milk mixture into the lined colander, allowing the whey to drain away. Let it drain for about 15-20 minutes until most of the whey has been removed.
6. Once the curds have drained, transfer them to a mixing bowl. Add salt to taste and mix well to incorporate.
7. At this point, you can shape the cheese into a desired form, such as a block or ball, or leave it loose for crumbly cheese.
8. Refrigerate the homemade cheese for at least 1 hour before serving to allow it to set and develop its flavor.
For the garnish:
– Chop the tomato, purple onion, and dill finely.
– Season with paprika, salt, and pepper mixture to taste.
– Drizzle with balsamic glaze for added flavor.
