Chicken Shawarma
Ingredients:
2 pounds boneless, skinless chicken thighs
2 teaspoons cumin
2 teaspoons paprika
1 teaspoon ground coriander
1 teaspoon turmeric
½ teaspoon dried oregano
¼ teaspoon cinnamon
¼ teaspoon ground cardamom
1 teaspoon salt
1 teaspoon pepper
¼ cup olive oil
3 tablespoons lemon juice
3 teaspoons minced garlic


Directions:
Marinate chicken: Place chicken in a sealable plastic bag. In a small bowl, combine cumin, paprika, coriander, turmeric, cinnamon, oregano, cardamom, salt and pepper to create the shawarma seasoning. In another bowl, whisk together olive oil, lemon juice, and minced garlic to create the marinade. Pour the marinade over the chicken in the bag, making sure it is evenly coated. Close the bag and let it marinate in the refrigerator for at least an hour or overnight for maximum flavor.
Preheat the grill: Preheat a grill to medium-high heat.
Grill the chicken: Cook the marinated chicken for about 6 to 8 minutes per side or until the juices run clear and the meat is fully cooked.
Rest and serve: Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing. Serve hot and enjoy the aromatic flavors of homemade chicken shawarma!
