🍌 Banana Pudding Cheesecake 🍰
📋 Ingredients:
1 1/2 cups (150g) vanilla wafer crumbs
1/4 cup (50g) granulated sugar
1/3 cup (75g) unsalted butter, melted
16 ounces (450g) cream cheese, softened
3/4 cup (150g) granulated sugar
2 ripe bananas, mashed
2 large eggs
1 teaspoon vanilla extract
1/4 cup (60ml) sour cream
1/4 cup (60ml) heavy cream
1 tablespoon cornstarch
1/4 cup (60ml) water
1 teaspoon lemon juice
2 ripe bananas, sliced
2 cups (480ml) whipped cream or whipped topping
📝 Instructions:
1️⃣ Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
2️⃣ In a mixing bowl, combine the vanilla wafer crumbs, 1/4 cup of granulated sugar, and melted butter. Press the mixture into the bottom of the prepared springform pan.
3️⃣ In another mixing bowl, beat the softened cream cheese and 3/4 cup of granulated sugar until smooth.
4️⃣ Add the mashed bananas, eggs, and vanilla extract to the cream cheese mixture, and beat until well combined.
5️⃣ Stir in the sour cream and heavy cream until smooth.
6️⃣ Pour the cheesecake batter over the prepared crust in the springform pan.
7️⃣ Bake in the preheated oven for 45-50 minutes, or until the center is almost set.
8️⃣ Remove the cheesecake from the oven and let it cool completely. Refrigerate for at least 4 hours or overnight.
9️⃣ In a small saucepan, combine the cornstarch, water, and lemon juice. Cook over medium heat, stirring constantly, until thickened.
🔟 Remove the saucepan from heat and let the mixture cool slightly.
1️⃣1️⃣ Arrange the sliced bananas over the chilled cheesecake.
1️⃣2️⃣ Pour the thickened cornstarch mixture over the bananas.
