Smoked Jalapeño Popper Chicken Bombs 🌶️🧀🍗
📋 Ingredients:
4 boneless, skinless chicken breasts
8 ounces cream cheese, softened
1 cup shredded cheddar cheese
1/4 cup diced jalapeños (fresh or pickled)
8 slices bacon
BBQ sauce (optional, for serving)

📝 Instructions:
1️⃣ Preheat your smoker to 250°F (120°C).
2️⃣ Butterfly each chicken breast by slicing horizontally through the middle, but not all the way through, to create a pocket.
3️⃣ In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, and diced jalapeños.
4️⃣ Stuff each chicken breast with the cream cheese mixture, dividing it evenly among them.
5️⃣ Wrap each stuffed chicken breast with two slices of bacon, securing them with toothpicks if needed.
6️⃣ Place the bacon-wrapped chicken bombs on the smoker rack and smoke for 2-3 hours, or until the internal temperature reaches 165°F (74°C) and the bacon is crispy.
7️⃣ Optionally, brush the smoked chicken bombs with BBQ sauce during the last 15 minutes of smoking for extra flavor.
8️⃣ Remove the chicken bombs from the smoker and let them rest for a few minutes before serving.
9️⃣ Serve the smoked jalapeño popper chicken bombs hot, with BBQ sauce on the side for dipping if desired.
Notes 💡:
◻️ Adjust the amount of diced jalapeños according to your desired level of spiciness. 🌶️
◻️ Make sure to fully cook the chicken until it reaches a safe internal temperature to ensure it’s cooked through. 🍗
◻️ These smoked chicken bombs make a delicious appetizer or main course for any BBQ or gathering. 🎉
