Sweet and Sour Crockpot Ribs
Enjoy tender and flavorful sweet and sour ribs made effortlessly in your crockpot. Perfect for a family meal or a gathering, these ribs are sure to be a hit!

Ingredients:
3 lbs pork baby back ribs
Salt and pepper, to taste
1 cup ketchup
1/2 cup brown sugar
1/2 cup apple cider vinegar
1/4 cup soy sauce
2 cloves garlic, minced
1 teaspoon ground ginger
1 teaspoon red pepper flakes (optional, for a bit of heat)
1/2 cup pineapple juice
1 medium onion, thinly sliced
1 bell pepper, thinly sliced


Instructions:
Prepare the Ribs:

Season the ribs with salt and pepper on both sides.
If needed, cut the ribs into smaller sections to fit in your crockpot.
Make the Sauce:

In a medium bowl, mix together the ketchup, brown sugar, apple cider vinegar, soy sauce, minced garlic, ground ginger, red pepper flakes (if using), and pineapple juice until well combined.
Assemble in Crockpot:

Place a layer of onion slices and bell pepper slices at the bottom of the crockpot.
Add the ribs on top of the vegetables.
Pour the sweet and sour sauce over the ribs, ensuring they are well coated.
Add the remaining onion and bell pepper slices on top of the ribs.
Cook:

Cover the crockpot and cook on low for 6-8 hours, or until the ribs are tender and the meat is easily pulling away from the bone.
Alternatively, you can cook on high for 3-4 hours.
Serve:

Carefully remove the ribs from the crockpot and place them on a serving platter.
Drizzle some of the sauce from the crockpot over the ribs.
Serve with your favorite side dishes, such as rice, mashed potatoes, or steamed vegetables.
