Ingredients:
- 1 lb sea scallops
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 3 garlic cloves, minced
- Juice of 1 lemon
- Zest of 1 lemon
- 2 tablespoons fresh parsley, chopped
Directions:
- Pat the scallops dry with paper towels and season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add the scallops in a single layer, making sure not to crowd the pan. Sear for 2-3 minutes on each side until a golden crust forms.
- Remove scallops from the skillet and set aside.
- In the same skillet, reduce the heat to medium and add butter.
- Once the butter has melted, add the minced garlic and cook for 1 minute until fragrant.
- Stir in the lemon juice and lemon zest.
- Return the scallops to the skillet and cook for another 1-2 minutes, spooning the sauce over them.
- Garnish with fresh parsley before serving.
