Strawberry Cheesecake Cupcakes

🍓 Strawberry Cheesecake Cupcakes 🧁
Ingredients:

1 1/2 cups graham cracker crumbs
1/4 cup melted unsalted butter
2 cups softened cream cheese
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/4 cup sour cream
1 cup fresh strawberries, chopped
2 tbsp strawberry jam
Strawberry Compote:

1 cup fresh strawberries, chopped
1/4 cup granulated sugar
1 tbsp lemon juice
1 tsp cornstarch dissolved in 1 tbsp cold water

Strawberry Cheesecake Cupcakes
Directions:

Preheat your oven to 325°F (165°C) and line a cupcake pan with liners.
Combine graham cracker crumbs with melted butter and press into the bottom of each cupcake liner.
Beat cream cheese and sugar until smooth. Add eggs one at a time, followed by vanilla and sour cream.
Gently fold in chopped strawberries and strawberry jam until evenly distributed.
Fill each liner with the cheesecake mixture. Bake for 20-22 minutes until set but slightly jiggly in the center.
For the compote, cook strawberries, sugar, and lemon juice in a saucepan until the berries break down. Stir in the cornstarch mixture and cook until thickened.
Once the cupcakes have cooled, top with strawberry compote and a fresh strawberry.
