Sizzling Skirt Steak Tacos
Ingredients:
2 lbs skirt steak
2 tbsp olive oil
Juice of 2 limes
4 garlic cloves, minced
1 tsp cumin
1 tsp smoked paprika
Salt and pepper to taste
8 corn tortillas
1 large onion, sliced
1 bunch cilantro, chopped
2 avocados, sliced
Fresh salsa (tomatoes, onions, cilantro, lime juice, salt)
Directions:
In a bowl, mix olive oil, lime juice, garlic, cumin, paprika, salt, and pepper. Add the skirt steak and marinate for at least 1 hour.
Heat a grill or skillet over medium-high heat. Cook the steak for 3-4 minutes per side or until desired doneness.
Rest the steak for 5 minutes, then slice thinly against the grain.
Warm the tortillas on the grill or skillet.
Assemble the tacos by placing slices of steak on each tortilla, topped with onion, cilantro, avocado slices, and fresh salsa.
