Shrimp Tortellini with Lemon Garlic Cream Sauce

Ingredients:

1 lb (450g) cheese tortellini (fresh or frozen)
1/2 lb (225g) shrimp, peeled and deveined
2 tablespoons olive oil
4 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
Zest of 1 lemon
Juice of 1 lemon
1/2 cup grated Parmesan cheese
Salt and pepper to taste
1 tablespoon fresh parsley, chopped (for garnish)
Lemon slices (optional, for garnish)
Directions:

1️⃣ Cook the Tortellini:

Cook the tortellini according to package instructions. Drain and set aside.
2️⃣ Cook the Shrimp:

In a large skillet, heat the olive oil over medium-high heat. Add the shrimp and season with salt and pepper. Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove from the skillet and set aside.
3️⃣ Make the Lemon Garlic Cream Sauce:

In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer.
Stir in the lemon zest, lemon juice, and Parmesan cheese. Continue to cook, stirring occasionally, until the sauce thickens slightly, about 3-4 minutes. Season with salt and pepper to taste.
4️⃣ Combine and Serve:

Add the cooked tortellini and shrimp back to the skillet, tossing to coat with the sauce. Cook for an additional 1-2 minutes to heat through.
Garnish with fresh parsley and serve with lemon slices, if desired.
