Smoky Cajun Shrimp and Sausage Foil Packs
Ingredients:
1 lb large shrimp, peeled and deveined
4 ears corn, husked and halved
1 lb baby potatoes, halved
1 lb smoked sausage, sliced
1/2 cup butter, melted
4 cloves garlic, minced
1 tablespoon Cajun seasoning
Salt and pepper to taste
Fresh parsley, chopped (for garnish)


Directions:

Preheat grill to medium-high heat or oven to 400°F (200°C).
In a small bowl, combine melted butter, minced garlic, Cajun seasoning, salt, and pepper.
Cut four large pieces of heavy-duty aluminum foil, about 18 inches long each.
Divide shrimp, corn, potatoes, and smoked sausage evenly among the foil sheets.
Drizzle each packet with the butter mixture, dividing it evenly.
Fold the foil over the ingredients and seal tightly to form packets.
Grill or bake for 15-20 minutes, or until shrimp are opaque and vegetables are tender.
Carefully open packets, garnish with chopped parsley, and serve hot.
