Savory Sausage Breakfast Muffins
Ingredients:
1 lb breakfast sausage, cooked and crumbled
1 cup sharp cheddar cheese, shredded
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup unsalted butter, melted
1 cup milk
2 large eggs
1/4 cup green onions, chopped
Directions:
Preheat oven to 375°F (190°C). Grease or line a muffin tin with paper liners.
In a large bowl, combine cooked sausage, shredded cheese, flour, baking powder, salt, and black pepper.
In another bowl, whisk together melted butter, milk, and eggs until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in chopped green onions.
Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
Bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
Remove from the oven and let cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
