Savory Salmon with Roasted Red Pepper Sauce
Ingredients:
4 salmon fillets
1 tablespoon olive oil
Salt and pepper to taste
1 cup roasted red peppers, chopped
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1 teaspoon smoked paprika
2 cloves garlic, minced
Fresh parsley, chopped (for garnish)


Directions:
Preheat oven to 400°F (200°C).
Season salmon fillets with salt and pepper on both sides.
Heat olive oil in a large oven-safe skillet over medium-high heat. Add salmon fillets, skin side down, and cook for 3-4 minutes until the skin is crispy. Flip the fillets and cook for another 2 minutes.
Transfer the skillet to the preheated oven and bake for 8-10 minutes until the salmon is cooked through.
Meanwhile, in a blender or food processor, combine roasted red peppers, heavy cream, Parmesan cheese, smoked paprika, and garlic. Blend until smooth.
Pour the sauce into a small saucepan and heat over medium heat until warmed through.
Remove the salmon from the oven and pour the roasted red pepper sauce over the top. Garnish with fresh parsley before serving.
