🍰 Red Velvet Oreo Cheesecake 🎈
📋 Ingredients:
24 Oreo cookies
1/4 cup (55g) unsalted butter, melted
16 ounces (450g) cream cheese, softened
1/2 cup (100g) granulated sugar
2 large eggs
1/4 cup (60ml) sour cream
1 teaspoon vanilla extract
1 tablespoon cocoa powder
2 tablespoons red food coloring
1 cup (240ml) heavy cream
1/4 cup (30g) powdered sugar
Additional Oreo cookies for decoration (optional)


📝 Instructions:
1️⃣ Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
2️⃣ Crush the Oreo cookies (filling and all) in a food processor until fine crumbs form. Combine the crumbs with melted butter and press the mixture into the bottom of the prepared pan.
3️⃣ In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream, vanilla extract, cocoa powder, and red food coloring until fully incorporated.
4️⃣ Pour the cheesecake batter over the Oreo crust and smooth the top with a spatula. Tap the pan gently on the counter to release any air bubbles.
5️⃣ Bake the cheesecake in the preheated oven for 40-45 minutes, or until the edges are set but the center still jiggles slightly.
6️⃣ Turn off the oven and leave the cheesecake inside with the door slightly ajar for about 30 minutes. Then, remove it from the oven and allow it to cool completely before refrigerating for at least 4 hours or overnight.
7️⃣ Before serving, whip the heavy cream and powdered sugar together until stiff peaks form. Spread the whipped cream over the chilled cheesecake and decorate with additional Oreo cookies if desired.
