Irresistibly soft and chewy red velvet cookie bars with cream cheese frosting!
3½ cups all-purpose flour
3 tablespoons unsweetened cocoa powder
1 tablespoon baking powder
½ teaspoon sea salt (or regular salt)
3½ cups light brown sugar (packed)
2 sticks unsalted butter, room temperature (or 1 cup)
3 large eggs
2 tablespoons vanilla extract
2 tablespoons gel food coloring (or 1 ½ tablespoons liquid)
Cream Cheese Frosting (optional):
6 ounces cream cheese
3 tablespoons unsalted butter, room temperature
Pinch of sea salt (or regular salt)
4-5 cups powdered sugar
Preheat oven to 325°F. Line a 9×13 baking dish with parchment paper.
Whisk flour, cocoa powder, baking powder, and salt in a medium bowl; set aside.
In a stand mixer, cream brown sugar and butter with the paddle attachment for about 5 minutes on low speed.
Add eggs, vanilla extract, and red food coloring; mix until blended.
Gradually add the flour mixture to the wet ingredients, mixing on low speed. Add extra red food coloring as needed.
Spread dough evenly in the baking dish. Chill in the fridge for at least 2 hours.
Remove dough, pierce lightly with a fork, and bake for 45-50 minutes. Allow to cool to room temperature before frosting.
For the frosting, beat cream cheese, butter, and salt until smooth. Gradually add powdered sugar until desired consistency is reached.
Frost cooled cookie bars and add sprinkles or white chocolate chips if desired.
