OKRA PATTIES
Ingredients:
1 pound okra, chopped
1/2 cup onion, chopped
1 teaspoon salt
1/4 teaspoon black pepper
1/2 cup water
1 egg, beaten
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 cup cornmeal
Vegetable oil for frying


Directions:
1️ Combine Wet Ingredients: In a large bowl, mix the chopped okra, onion, salt, pepper, water, and beaten egg until well combined.
2️ Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and cornmeal.
3️ Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined.
4️ Heat Oil: In a large skillet, heat the vegetable oil over medium heat.
5️ Fry Patties: Drop spoonfuls of the batter into the hot oil and fry for 2-3 minutes on each side, or until golden brown.
6️ Drain and Serve: Remove the okra patties from the oil and drain on paper towels. Serve hot and enjoy the crispy goodness!
