Monster Energy Balls
Ingredients:
1 cup creamy peanut butter
1/3-1/2 cup honey, more as needed
1 teaspoon vanilla extract
Pinch of salt
1 ½ cups old fashioned oats, plus more as needed
¼ cup ground flaxseed
⅓ cup mini M&M’s, plus more as desired
¼ cup mini chocolate chips, plus more as desired
Optional Mix-in’s: Pinch of ground cinnamon, Chia seeds, Protein powder, Crispy rice cereal, Coconut


Instructions:
Line a baking sheet with parchment paper.
In a medium bowl, stir together the peanut butter, honey, vanilla, and salt until smooth. Taste and add more honey if desired.
Add the oats, flaxseed, mini M&M’s, chocolate chips, and any other desired mix-ins. Stir until combined.
Using a small cookie scoop or 1 tablespoon, shape the dough into balls and place on the baking sheet.
Chill in the refrigerator on the baking sheet. Then once firm, move to a covered container.

Freeze Time: 5 minutes
Total Time: 10 minutes
