Mediterranean-Style Cod with Savory Olive Tapenade
Ingredients:
4 cod fillets
1 cup mixed olives (black and green), pitted and chopped
2 tablespoons capers, rinsed
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
1 lemon, zested and juiced
2 tablespoons extra virgin olive oil
Salt and pepper to taste
1 tablespoon olive oil (for cooking)
Lemon wedges for serving
Directions:
Preheat your oven to 400°F (200°C).
In a medium bowl, combine the chopped olives, capers, garlic, parsley, lemon zest, lemon juice, and extra virgin olive oil. Mix well to create the tapenade. Season with salt and pepper to taste.
Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
Heat the olive oil in a large oven-safe skillet over medium-high heat. Once the oil is hot, add the cod fillets, skin-side down, and cook for about 2-3 minutes, until the skin is crispy and golden brown.
Flip the fillets and spread the olive tapenade evenly over the top of each fillet.
Transfer the skillet to the preheated oven and bake for about 10-12 minutes, or until the fish is opaque and flakes easily with a fork.
Serve the cod fillets with lemon wedges on the side.
