📋 Ingredients:

Crumb Topping Ingredients:
🍋 1 ½ cups all purpose flour
🍂 ¾ cup brown sugar
🧂 ¼ tsp salt
🍋 2 tsp lemon zest
🧈 ½ cup cold butter, cubed

Cake Ingredients:
🍚 1 ½ cups all purpose flour
🧂 ½ tsp salt
🥄 ½ tsp baking soda
🥄 1 tsp baking powder
🧈 ½ cup unsalted butter, room temperature
🍬 1 cup granulated sugar
🥚 2 large eggs
🍋 1 tbsp lemon zest
🍋 2 tbsp lemon juice
🍦 1 cup sour cream, room temperature


📝 Instructions:

🥣 Make the crumb topping first. In a medium mixing bowl, combine flour, brown sugar, salt, and lemon zest. Add cold butter pieces, using hands or a pastry blender to cut butter into dry ingredients until pea-sized. Place in fridge. ❄️
🥚 Remove eggs and sour cream from fridge to reach room temperature. Preheat oven to 350º F. 🔥
🥣 In a medium bowl, combine flour, salt, baking soda, and baking powder. Set aside. 🥄
🧈 In a large mixing bowl, beat butter and sugar together with a mixer for 2 minutes. Add eggs, lemon zest, and lemon juice. Beat until incorporated. 🍋
🍦 Add sour cream and mix with a spatula. Add dry ingredients, half at a time, mixing by hand with a spatula just until incorporated. 🍚
🧴 Spray an 8×8 inch baking dish with non-stick spray. Transfer lemon cake batter to pan and spread evenly. 🍰
❄️ Remove crumb topping from fridge and spread evenly over cake, breaking up large pieces as needed. 🍰
🔥 Bake for 45 minutes or until a toothpick inserted in the center comes out clean. Allow cake to cool, serve. 🍴
