Ingredients:
4 large potatoes, grated
2 teaspoons salt
1/4 teaspoon black pepper
2 tablespoons all-purpose flour
2 large eggs (for latkes)
4 large eggs (for poaching)
1 tablespoon white vinegar
200 grams smoked salmon
1 recipe hollandaise sauce
Fresh dill and chives, for garnish
Directions:
Place grated potatoes in a colander, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess moisture.
In a large bowl, mix potatoes, pepper, flour, and 2 beaten eggs. Form into patties.
Heat oil in a skillet over medium heat. Fry latkes until golden brown on both sides. Drain on paper towels.
Bring water to a simmer in a saucepan. Add vinegar. Crack eggs into water and poach for 3-4 minutes. Remove with a slotted spoon.
Assemble by placing a latke on a plate, top with smoked salmon, a poached egg, and drizzle with hollandaise. Garnish with dill and chives.
