Juicy pork loin in almond sauce with white wine

Ingredients
1 1/2 kilo pork loin head
1 onion cut in half moon
4 tablespoons of the olive oil
4 peeled garlic cloves
1/2 cup almonds
1 slice of white bread
1 glass of white wine
1/2 cup chicken broth
Salt and pepper to taste
2 ramas de tomillo
PREPARATION
HEAT in an instant pot the olive oil, grate the almonds and slice of bread; remove the almonds until they have a light golden color and bread until well golden.
SEASON the tenderloin with salt and pepper all around, then seal it in the same instant pot where the almonds were golden.
REMOVE the pork loin and place it on a plate. Add the onions to the same pot and cook until caramelized.
ADD whole garlic and cook for three minutes; return the pork loin along with the liquids you extracted.
POUR white wine and cook until alcohol evaporates, add chicken broth, bread and almonds; close the espresso pot and cook over medium heat for 25 minutes.
WAIT until the pot is cold and the valve is down before you can open it.
TAKE the sirloin out of the pot and place it on a serving plate, use an immersion mixer to dissolve whatever was left in the pot; cook on medium heat for 5 minutes or until thickens.
SERVE this spectacular pork loin bathed in a thick almond sauce and enjoy
