Jalapeno Popper Chicken Skillet
Spicy and Creamy Jalapeno Popper Chicken Skillet
Ingredients:
2.5 pounds chicken breast
5 ounces cream cheese
8 ounces bacon (roughly 6 slices)
3/4 cup diced and seeded jalapeno peppers
1.5 cups shredded cheddar cheese
Directions:
Cook the bacon in a skillet over medium heat until crispy. Set aside.
Cut the chicken breast into bite-sized pieces.
In the same skillet, cook the chicken in the bacon grease over medium heat for about 8 minutes.
Add the diced jalapeno peppers and continue cooking until the chicken is fully cooked.
While the chicken is cooking, cut the cream cheese into chunks and shred the cheddar cheese.
Once the chicken is done, lower the heat and add the cream cheese, stirring until it melts.
Sprinkle the cheddar cheese on top and cover the skillet with a lid until the cheese is melted.
Serve hot, garnished with chopped parsley if desired.
