Italian Sausage Casserole
Ingredients:
1 lb Italian sausage, casings removed
1 onion, chopped
2 cloves garlic, minced
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 zucchini, chopped
1 can (14.5 oz) diced tomatoes, undrained
1 cup marinara sauce
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 cups cooked pasta


Directions:
Preheat the oven to 375°F (190°C).
In a large skillet over medium heat, cook the Italian sausage until browned. Remove from skillet and set aside.
In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent.
Add the red and yellow bell peppers and zucchini. Cook until the vegetables are tender.
Stir in the diced tomatoes, marinara sauce, oregano, basil, salt, and pepper. Cook for a few more minutes.
Add the cooked Italian sausage and pasta to the skillet. Mix well to combine.
Transfer the mixture to a baking dish. Sprinkle the mozzarella and Parmesan cheese on top.
Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
