Glazed Cod with Ginger and Soy Sauce
Ingredients:
4 cod fillets
1/4 cup soy sauce
2 tablespoons honey
2 tablespoons fresh ginger, grated
2 cloves garlic, minced
1 tablespoon sesame oil
1/4 cup green onions, chopped
1 tablespoon sesame seeds
Salt and pepper to taste
Directions:
In a small bowl, combine the soy sauce, honey, ginger, garlic, and sesame oil. Mix well.
Place the cod fillets in a shallow dish and pour the marinade over them. Ensure the fillets are well-coated. Cover and refrigerate for at least 30 minutes.
Preheat your oven to 400°F (200°C).
Remove the cod from the marinade and place on a baking sheet lined with parchment paper. Season with salt and pepper.
Bake for 12-15 minutes or until the fish flakes easily with a fork.
While the fish is baking, pour the remaining marinade into a small saucepan and bring to a boil. Reduce the heat and simmer for 3-5 minutes until slightly thickened.
Once the fish is done, drizzle the thickened marinade over the top. Garnish with chopped green onions and sesame seeds.
