German Potato Salad 🥔🥓🥗
📋 Ingredients:
2 pounds potatoes, peeled and diced
6 slices bacon, chopped
1 small onion, finely chopped
1/4 cup apple cider vinegar
2 tablespoons granulated sugar
1 tablespoon Dijon mustard
Salt and pepper to taste
Chopped fresh parsley for garnish (optional)


📝Instructions:
1️⃣ Place diced potatoes in a large pot and cover with cold water. Bring to a boil over medium-high heat, then reduce heat and simmer until potatoes are fork-tender, about 10-15 minutes. Drain and set aside.
2️⃣ In a skillet, cook chopped bacon over medium heat until crisp. Remove bacon from skillet and set aside, leaving the bacon drippings in the skillet.
3️⃣ Add finely chopped onion to the skillet with bacon drippings and cook until softened, about 3-4 minutes.
4️⃣ Stir in apple cider vinegar, granulated sugar, and Dijon mustard. Cook, stirring constantly, until the sugar has dissolved and the mixture is well combined.
5️⃣ Add the cooked potatoes and cooked bacon to the skillet. Gently toss to coat the potatoes with the dressing.
6️⃣ Season the German potato salad with salt and pepper to taste.
7️⃣ Serve the potato salad hot or at room temperature, garnished with chopped fresh parsley if desired.
Notes 💡:
◻️ This German potato salad is traditionally served warm, but it can also be enjoyed cold.
◻️ You can add diced pickles or pickle juice for extra flavor if desired.
