Flavorful Tuscan Tortellini Pasta Salad
Ingredients:
1 (20 oz) package cheese tortellini
1/2 cup sun-dried tomatoes, chopped
1/2 cup Kalamata olives, pitted and halved
1/2 cup cherry tomatoes, halved
1/4 cup red onion, finely chopped
1/4 cup fresh basil, chopped
1/4 cup grated Parmesan cheese
1/4 cup pine nuts, toasted
Salt and pepper to taste
For the Dressing:
1/4 cup olive oil
2 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
1 clove garlic, minced
Salt and pepper to taste
Directions:
Cook the tortellini according to the package instructions. Drain and rinse with cold water to cool. Set aside.
In a large bowl, combine the cooked tortellini, sun-dried tomatoes, Kalamata olives, cherry tomatoes, red onion, fresh basil, grated Parmesan cheese, and toasted pine nuts.
In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper to make the dressing.
