Luxurious White Chocolate Pistachio Cake
Ingredients:
Cake:
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup whole milk
1/2 cup finely chopped pistachios
White Chocolate Frosting:
8 oz white chocolate, melted and cooled
1 cup unsalted butter, softened
4 cups powdered sugar
1/4 cup heavy cream
1 teaspoon vanilla extract
Garnish:
1/2 cup chopped pistachios
White chocolate curls (optional)
Directions:
Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the creamed mixture alternately with the milk, mixing well after each addition. Fold in the chopped pistachios.
Divide the batter evenly among the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pans for 10 minutes, then remove to wire racks to cool completely.
For the frosting, beat the butter until creamy. Gradually add the powdered sugar, beating until smooth. Beat in the melted white chocolate, heavy cream, and vanilla extract until the frosting is light and fluffy.
Place one cake layer on a serving plate. Spread a layer of frosting over the top. Repeat with the second and third layers. Frost the top and sides of the cake with the remaining frosting.
Garnish the cake with chopped pistachios and white chocolate curls, if desired.
