Easy Air Fryer Arancini 🍚🧀
📋 Ingredients:
2 cups cooked risotto, chilled
1/2 cup grated Parmesan cheese
1/2 cup mozzarella cheese, cubed
1/4 cup all-purpose flour
2 large eggs, beaten
1 cup breadcrumbs
Cooking spray


📝 Instructions:
1️⃣ In a mixing bowl, combine chilled cooked risotto and grated Parmesan cheese until well mixed.
2️⃣ Take a small portion of the risotto mixture and flatten it in your palm.
3️⃣ Place a cube of mozzarella cheese in the center and roll the risotto mixture into a ball, ensuring the cheese is completely covered.
4️⃣ Repeat until all the risotto mixture is used, making about 12 arancini balls.
5️⃣ Preheat your air fryer to 370°F (187°C).
6️⃣ Place flour, beaten eggs, and breadcrumbs in three separate shallow dishes.
