🥒 Dill Pickle Pasta Salad 🍜
📋 Ingredients:
8 ounces (225g) rotini pasta
1 cup (240g) dill pickles, diced
1/2 cup (120ml) mayonnaise
1/4 cup (60ml) pickle juice
2 tablespoons Dijon mustard
2 tablespoons chopped fresh dill
1/4 cup (25g) chopped red onion
1/4 cup (30g) chopped celery
Salt and black pepper to taste
1/2 cup (60g) shredded cheddar cheese
Chopped fresh parsley for garnish (optional)
📝 Instructions:
1️⃣ Cook the rotini pasta according to the package instructions until al dente. Drain and rinse with cold water to cool.
2️⃣ In a large mixing bowl, combine the diced dill pickles, mayonnaise, pickle juice, Dijon mustard, chopped fresh dill, chopped red onion, and chopped celery. Mix well.
3️⃣ Add the cooked and cooled rotini pasta to the bowl and toss until evenly coated with the dressing mixture.
4️⃣ Season the pasta salad with salt and black pepper to taste.
5️⃣ Gently fold in the shredded cheddar cheese.
6️⃣ Cover and refrigerate the Dill Pickle Pasta Salad for at least 1 hour to allow the flavors to meld.
