Delicious Chocolate Chip Cookie Ice Cream Cups
Ingredients:
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup mini chocolate chips
2 cups vanilla ice cream (or your favorite flavor)
Chocolate syrup (for drizzling, optional)
Whipped cream (for topping, optional)
Directions:
Preheat oven to 350°F (175°C). Grease a standard muffin tin.
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the mini chocolate chips.
Divide the cookie dough evenly among the muffin cups, pressing the dough down into the bottom and up the sides to form a cup shape.
Bake for 10-12 minutes, or until the edges are golden brown. Remove from oven and use the back of a spoon to press down the centers if they have puffed up. Let cool completely in the tin.
Once cooled, carefully remove the cookie cups from the tin.
Fill each cookie cup with a scoop of ice cream. Drizzle with chocolate syrup and top with whipped cream, if desired.
