Crispy Ranch and Cheddar Roasted Potatoes
Ingredients:
2 pounds baby potatoes, halved
2 tablespoons olive oil
1 packet ranch seasoning mix
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
Salt and pepper to taste
Directions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, toss the halved baby potatoes with olive oil, ranch seasoning mix, salt, and pepper until well coated.
Spread the potatoes in a single layer on the prepared baking sheet.
Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden and crispy.
Remove from the oven and sprinkle with shredded cheddar and Parmesan cheese. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Garnish with chopped parsley before serving.
