1 cup milk, lukewarm
1 tablespoon active dry yeast
1/3 cup granulated sugar
3 egg yolks
1 teaspoon vanilla extract
4 tablespoons unsalted butter, softened
4 1/4 cups all-purpose flour
1 1/2 teaspoons salt
Vegetable oil for frying
Custard Filling:
1/2 cup granulated sugar
1/2 teaspoon salt
3 tablespoons cornstarch
2 cups milk
4 egg yolks
2 teaspoons vanilla extract
2 tablespoons unsalted butter
Brûlée Topping:
1 cup granulated sugar
1/4 cup water
Directions:
Prepare the Dough:
Activate Yeast: Combine lukewarm milk, yeast, and a teaspoon of sugar. Let it sit for 10-15 minutes until foamy.
Mix Ingredients: Add egg yolks and vanilla extract to the yeast mixture. In a stand mixer bowl, combine flour, remaining sugar, butter, and salt. Pour in the yeast mixture and knead until smooth and elastic.
First Rise: Transfer dough to a greased bowl, cover, and let rise for 1-2 hours or until doubled in size.
Make the Custard:
Prepare Custard Base: Whisk together sugar, salt, and cornstarch. Beat egg yolks and mix in dry ingredients until smooth.
Cook Custard: Heat milk until simmering, then temper into the egg mixture. Cook until thick and bubbling, then stir in vanilla extract and butter. Refrigerate until cool.
Shape and Fry Donuts:
Punch down dough and roll to 1/2-inch thickness. Cut rounds with a cookie cutter, let rise for 20-30 minutes.
Heat oil to 360°F and fry donuts until golden brown. Drain on paper towels.
Assemble and Brûlée:
Fill donuts with custard using a piping bag.
Cook sugar and water until golden for the brûlée topping. Dip each donut top into the caramel and let it harden.
