Creamy Banana Pudding Cheesecake Delight
Ingredients:
1 1/2 cups vanilla wafer crumbs
1/3 cup unsalted butter, melted
1/4 cup granulated sugar
16 oz cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1/2 cup sour cream
1 tsp vanilla extract
3 ripe bananas, mashed
1 cup whipped cream
1/2 cup vanilla pudding mix (prepared)
1/2 cup vanilla wafer crumbs, for topping


Directions:

Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
In a bowl, combine vanilla wafer crumbs, melted butter, and 1/4 cup sugar. Press into the bottom of the prepared pan.
In a large mixing bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, beating well after each addition.
Mix in sour cream and vanilla extract until smooth. Fold in mashed bananas and prepared vanilla pudding.
Pour batter over the crust in the pan. Smooth the top with a spatula.
Bake for 45-50 minutes or until the center is almost set. Turn off the oven and let cheesecake cool in the oven with the door cracked open for 1 hour.
Remove from oven and refrigerate for at least 4 hours or overnight.
Before serving, spread whipped cream over the top and sprinkle with vanilla wafer crumbs.
