Creamy Baileys Chocolate Mint Pudding
Ingredients:
2 cups whole milk
1/2 cup granulated sugar
1/4 cup unsweetened cocoa powder
2 tbsp cornstarch
1/4 tsp salt
3 large egg yolks
1/2 cup Baileys Irish Cream with Mint
1/2 cup semi-sweet chocolate chips
1 tsp vanilla extract
Whipped cream and mint leaves for garnish
Directions:
In a medium saucepan, whisk together the milk, sugar, cocoa powder, cornstarch, and salt. Cook over medium heat, stirring constantly, until the mixture comes to a boil and thickens.
In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot milk mixture to the egg yolks, whisking constantly to temper the eggs.
Slowly pour the egg yolk mixture back into the saucepan, whisking constantly. Cook for an additional 2-3 minutes until the mixture thickens further.
Remove the saucepan from heat and stir in the Baileys Irish Cream with Mint, chocolate chips, and vanilla extract until smooth and fully incorporated.
Pour the pudding into serving dishes and cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
Chill in the refrigerator for at least 2 hours before serving. Garnish with whipped cream and mint leaves.
