Cheesy Spinach Stuffed Shells
Creamy Ricotta and Spinach Stuffed Shells
Ingredients:

24 jumbo pasta shells
1 tablespoon olive oil
2 cups ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 cups fresh spinach, chopped
1 egg, lightly beaten
2 cloves garlic, minced
2 cups marinara sauce
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and pepper to taste
Fresh basil for garnish (optional)


Directions:

Preheat oven to 375°F (190°C). Cook pasta shells according to package instructions, then drain and set aside.
In a large bowl, combine ricotta cheese, 1/2 cup mozzarella cheese, Parmesan cheese, chopped spinach, egg, garlic, dried basil, dried oregano, salt, and pepper.
Fill each cooked pasta shell with the cheese and spinach mixture.
Spread 1 cup of marinara sauce on the bottom of a baking dish. Arrange the stuffed shells in the dish, then top with the remaining marinara sauce and the remaining mozzarella cheese.
Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
Garnish with fresh basil before serving, if desired.
